Ingredients

 1: oil 1/3

 2: cumin seeds 3 tsp

 3: asafoetida 1/4 tsp (hing)

 4: green chilli 4 (chopped)

 5: fresh ginger 1 tbsp

 6: tomatoes 2 medium (chopped)

 7: coriander powder 2 tsp

 8: salt 1 tsp (heaped)

 9: turmeric 1/2 tsp

10: crushed red chilli 2 tsp

11: crushed black pepper 1 tsp

12: garam masala powder 1 tsp

13: dry mango powder 1 tsp (amchoor)

14: potatoes 1 kg (pealed, boiled)

15: dry fenugreek leaves 2 tbsp

16: fresh coriander 3 tbsp

Instructions

  1. 1: heat oil add cumin seeds, asafoetida, green chilli, ginger mix and fry on high flame for 1 to 2 minutes.

     2: then add tomatoes, coriander powder, salt, turmeric, crushed red chilli, crushed black pepper, garam masala powder, mango powder, water 1/2 cup mix and cook on medium flame till the tomatoes reduce and oil comes on surface.

     3: now add the boiled potatoes, dry fenugreek leaves mix and simmer on low flame for 5 to 6 minutes.

     4: add fresh coriander mx well.

     5: serve hot with roti, paratha.
