Tortilla Breakfast Pizza

Ingredients

- 2 large eggs

- 1/2 teaspoon salt

- 1/2 teaspoon garlic powder

- 1/2 teaspoon crushed red chilli flakes

- 1 large tortilla

- 1 teaspoon tomato paste

- Chicken salami (as needed, sliced or diced)

- 1 1/2 tablespoons finely chopped onion

- 2 teaspoons chopped bell pepper (any colour)

- 2 black olives, sliced

- Mozzarella cheese (to taste, shredded)

- Olive oil (for brushing and cooking)

  1. 1. Prepare the Egg Mixture: In a bowl, beat together 2 large eggs, 1/2 teaspoon salt, 1/2 teaspoon garlic powder, and 1/2 teaspoon crushed red chilli flakes until well combined.

     

    2. Prepare the Tortilla: Spread 1 teaspoon of tomato paste evenly over one side of the tortilla.

     

    3. Preheat the Pan: Lightly brush a frying pan with olive oil and heat over medium heat.

     

    4. Cook the Toppings: Add chicken salami, finely chopped onion, and chopped bell pepper to the pan. Sauté for about 1 1/2 minutes over low to medium heat, stirring occasionally.

     

    5. Add the Egg Mixture: Pour the egg mixture over the cooked toppings in the pan. Allow the eggs to cook gently until they begin to set but are still slightly runny.

     

    6. Add Cheese and Tortilla: Sprinkle a generous amount of shredded mozzarella cheese over the egg mixture. Place the tortilla, tomato paste side down, on top of the egg and cheese. Press down gently, cover, and cook for about 2 minutes to allow the tortilla to stick and the cheese to start melting.

     

    7. Flip and Crisp: Brush the top of the tortilla with a little olive oil. Carefully flip the tortilla and sprinkle more shredded mozzarella cheese on top. Cover and cook until the bottom is crispy and golden brown, and the cheese is fully melted.

     

    8. Serve: Remove from heat and let cool slightly before slicing. Serve hot with your favourite cold beverages.
