Tandoori Prawns Biryani

Ingredients

 To Marinate the Prawns:

 - 1 kg Prawns

 - 6 tbsp Thick Yogurt

 - 4 tbsp Vinegar

 - 2 1/2 tbsp Heaped Tandoori Masala

 - 1 tsp Red Chilli Powder

 - 1 tsp Garam Masala Powder

 - 1/2 tsp Salt

 - 1 1/2 tbsp Dry Fenugreek Leaves

 - 1/4 tsp Orange Food Colour

 

 To Cook the Prawns:

 - 1/2 cup Oil

 - 4 Green Chillies (chopped)

 - 2 Medium Onions (ground)

 - 1 1/2 tbsp Ginger & Garlic Paste

 - 2 Large Tomatoes (ground)

 - 1 tsp Salt

 - 2 tsp Cumin Seeds (dry roasted and crushed)

 - 1 tsp Red Chilli Powder

 - Coals for smoking the prawns

 

 To Boil the Rice:

 - 800g Rice (washed)

 - 2 Cinnamon Sticks

 - 2 Black Cardamom Pods

 - 5 Green Cardamom Pods

 - 2 Star Anise

 - 5 Cloves

 - 1 tbsp Cumin Seeds

 - 1/2 tsp Black Peppercorns

 - 2 Bay Leaves

 - 2 tbsp Salt

 - 4 tbsp Lemon Juice

 - 12 Mint Leaves

 - 3 tbsp Coriander Leaves

 - 4 Green Chillies

 - 3 tbsp Oil

 

 For Garnishing:

 - 2 tbsp Clarified Butter

 - 12 Almonds (sliced)

 - 2 tbsp Raisins

 

 Other Ingredients:

 - 4 Bullet Green Chillies (chopped)

 - 2 tbsp Kewra Water (mixed with) 1/2 tsp Orange Food Colour

- 1/2 cup Fried Onions

- Handful of Fresh Coriander

 

 

Instructions

  1. Tandoori Prawns Biryani

     1. Marinate the Prawns:

       - In a bowl, combine the prawns and all the ingredients listed under marination. Mix well and set aside for 1 hour.

     

     2. Prepare the Prawn Curry:

       - Heat oil in a pan, add chopped green chilli, ground onions, and ginger & garlic paste. Fry on high flame until they turn golden.

       - Add the ground tomatoes, salt, roasted and crushed cumin seeds, and red chilli powder. Mix well.

       - Add the marinated prawns and cook on medium flame until the oil separates.

     

     3. Infuse Smoky Flavor:

       - Heat coals and place them on the prawns. Drizzle oil on the hot coals, cover, and wait until the smoke settles.

     

     4. Boil the Rice:

       - In a large pot, combine the rice with all the ingredients listed under rice. Mix and boil the rice until it's 80% cooked on high flame, then drain the water.

     

     5. Prepare the Garnish:

       - Heat clarified butter, add sliced almonds and raisins, and fry for a minute on high flame. Set aside.

     

     6. Assemble the Biryani:

       - Take a large pot and layer the prawn curry, boiled rice, chopped green chillies, kewra water and color mixture, fried onions, coriander leaves, and the fried nuts and raisins.

     7. Cook the Biryani:

       - Cover the pot with a tea towel and lid. Cook on high flame for the first 5 minutes, then reduce to low flame and cook for 12 to 15 minutes.

     

     8. Serve and Enjoy:

       - Serve this mouthwatering Tandoori Prawns Biryani hot with a side of kachumber salad.
