SWEET POTATO MUFFINS

Ingredients

 

 

1: sweet potato (SHAKARKANDI)1&1/4 cup (boil till gets soft remove skin &mash)

2: salted butter 100g (room temperature)

3: sugar 1&1/4 cup

4: eggs 2

5: milk 1 cup

6: plain flour 1&1/2 cup

7: baking powder 2 tsp

8: cinnamon powder 1&1/2 tsp

9: raisins 1/2 cup

10: white chocolate 1 cup (chopped)

11: almonds 1/2 cup (chopped)

 

 

Instructions

  1. SWEET POTATO MUFFINS

     

     

    1: boil the sweet potato and mash it.

    2: sieve the flour, cinnamon powder, baking powder.

    3: beat butter, sugar till gets smooth on high speed.

    4: now add the mashed sweet potato, eggs and beat till combined on high speed.

    5: then add the sieved flour mixture, milk and beat once again.

    6: add the white chocolate half, almonds half, raisins half mix well with a spoon.

    7: fill the muffin liners 3/4 top it with remaining chocolates, almonds, raisins.

    8: preheat oven and bake for good (12 to 15 minutes for cupcakes & 20 to 35 minutes for muffins) or till the tooth pick inserted comes out clean.

    9: serve hot or cold.
