Sulemani Gosht

Ingredients

 

 1: oil 1/2 cup

 2: onions 3 large (grind)

 3: ginger & garlic paste 1 tbsp (heaped)

 4: green chilli 6 (sliced)

 5: mutton 1 kg (boil 80% with ginger & garlic paste 1 tbsp, salt 1 tsp, water and once the meat is tender keep the remaining stock aside)

 6: salt 1 tsp

 7: crushed black pepper 1 & 1/2 tsp

 8: red chilli powder 1 tsp

 9: cumin seeds 1 tbsp (dry roasted & crushed)

10: coriander seeds 1 tbsp (dry roasted & crushed)

11: lemon juice 3 tbsp

12: yogurt 1 cup

13: ginger 2 inch (Julian cut)

14: bullet green chilli 6 to 7 (slice in half)

15: fresh coriander handful

 

Instructions

  1. Sulemani Gosht

     1: heat oil add the onions and fry on high flame till gets golden.

     2: add ginger & garlic paste, green chilli and fry on high flame for 2 minutes.

     3: then add boiled mutton, salt, crushed black pepper, red chilli powder, cumin, coriander, lemon juice mix and cook on high flame for a few minutes.

     4: then add 1 cup of the remaining stock of the meat or water and mix, cover and cook on low to medium flame till the oil comes on surface.

     5: add yogurt mix and cook on high flame till the oil comes on surface.

     6: now add ginger, green chilli, fresh coriander mix and cook further 3 minutes on high flame.

     7: serve hot with roti, naan.
