Spicy Chicken & Veg Rice
Ingredients
Marinated Chicken:
- 1 kg boneless chicken (cut into 1-inch pieces)
- 3 tbsp vinegar
- 1/2 tsp turmeric
- 2 tsp red chilli powder (heaped)
- 1 1/2 tsp black pepper powder
- 2 tsp paprika powder
- 2 tsp cumin powder (heaped)
- 1 tsp salt
Other Ingredients:
- 2 cups grated carrots (heaped)
- 3 bell peppers (deseeded & cubed)
- 2 cups sliced cabbage (heaped)
- 1 tsp salt
- 1 tsp cumin powder
- 1/2 tsp black pepper powder
- 1/2 tsp paprika powder
- 1 large onion (chopped)
- 8 green chilies (chopped)
- 2 tbsp crushed garlic
- 1/2 cup oil
- 1/4 tsp turmeric
Boiled Rice:
- 850g rice (My Boiled Rice Recipe)
- 2 tbsp lemon juice
- 1 1/2 tsp salt
- 4 tbsp oil
- Enough water to boil the rice
Sauce:
- 1 cup mayonnaise
- 1 1/2 cups thick Greek yogurt
- 1 tsp black pepper powder
- 1/2 tsp salt
- 1 tbsp sugar
- 1 1/2 tsp parsley or coriander
- 1 tbsp vinegar
Instructions

1. Boil the rice until it's 80% cooked using the ingredients listed under "Boiled Rice."
2. In a bowl, marinate the chicken with all the ingredients listed under "Marinated Chicken." Mix well and set aside for half an hour.
3. To make the sauce, mix all the ingredients listed under "Sauce" in a bowl. Refrigerate it to serve later with the rice.
4. Heat oil in a large pot, add chopped onions, and fry until they become soft over high heat.
5. Add crushed garlic and fry for 1 minute on high heat. Then, add the marinated chicken and fry until it changes color. Add 1 cup of water, cover, and cook on medium heat until the chicken is tender.
6. Now, add green chilies, carrots, cabbage, bell peppers, salt, black pepper, paprika powder, cumin powder, and turmeric. Mix well over high heat.
7. Add the boiled rice to the pot and mix thoroughly.
8. Cover the pot with a lid. Cook on high heat for the first 3 minutes, then reduce the heat to low and simmer for 12 to 15 minutes.
9. Serve the flavorful chicken and vegetable rice with the prepared sauce. Enjoy!
