Spicy Chicken Buns
Ingredients

For Dough:
1: plain flour 2 & 1/2 cup
2: egg 1
3: salt 1 tsp
4: yeast 1 tbsp
5: milk 1 cup (warm)
6: sugar 1 tsp
For Filling:
1: oil 3 tbsp
2: cumin seeds 1 tsp
3: onion 1 medium (finely chopped)
4: ginger & garlic paste 1 & 1/2 tsp
5: boneless chicken 500g (cut into very small pieces)
6: distilled vinegar 2 tbsp
7: dark soy sauce 2 tbsp
8: red chilli powder 1 tsp
9: crushed black pepper 1 tsp
10: garam masala powder 1/2 tsp
11: plain flour 2 tbsp
12: milk 1 cup
13: salt 1 tsp
14: black pepper powder 1/4 tsp
15: green chilli 1 (chopped)
16: bell pepper 3 tbsp
17: mozzarella cheese 1/2 cup
18: egg 1 (beat)
19: sesame seeds for sprinkling
20: salted butter (melted) for brushing the buns
Instructions

NOTE: Preheat Oven 350F, 180C, Gas Mark 4.
1: in a bowl add all ingredients under the dough mix well and knead the dough till gets smooth, if the dough is too sticky then add very little plain flour and keep kneading (but not too much flour).
2: now grease a bowl with oil and place the dough in it and put some oil on the dough as well, cover and keep in a warm place till the dough doubles in size.
3: in a frying pan heat oil add cumin, onions, ginger & garlic paste and fry till the onions get soft.
4: now add the chicken and fry till changes colour on high flame.
5: add vinegar, soy sauce, red chilli, crushed black pepper, garam masala powder, water 1/2 cup mix cover and cook on low to medium flame till the water dries and chicken is tender.
6: now add plain flour and cook with the chicken for 1 to 2 minutes.
7: add milk, salt, black pepper, green chilli, bell pepper, and mozzarella mix well and cook till the mixture gets thick on medium flame, leave to cool.
8: once the dough has risen punch it to remove extra air and knead it, make 8 balls, and roll the dough balls as shown in the video.
9: place the filling in the middle and fold the sides to close the bun, place the filled buns on a baking tray cover and leave it for 10 to 15 minutes.
10: beat an egg and brush the buns, sprinkle sesame seeds and place the tray on the middle rack in the oven, bake for 20 to 25 minutes.
11: once baked brush butter on the buns and cover it so the buns stay soft.
12: serve with any sauce of your choice, tea, or cold drinks and enjoy.
