Special Dhaba Style Dal
Ingredients
To Boil Dal:
1: pigeon peas dal 6 tbsp (Toor dal or Arhar Dal)
2: split Bengal dal 6 tbsp (chana dal)
3: red lentil dal 6 tbsp (masoor dal)
4: white lentil dal 6 tbsp (mashed dal)
5: yellow split dal 6 tbsp (moong dal)
6: salt 2 tsp
7: turmeric 1 tsp
8: water 8 cups
For Masala:
1: oil 1/2 cup
2: cumin seeds 2 tsp
3: bay leaves 1
4: mustard seeds 1 tsp
5: black cardamom 2
6: star anise 2
7: green cardamom 4
8: cloves 4
9: green chilli 4 (chopped)
10: asafoetida 1/4 tsp
11: ginger & garlic paste 2 tbsp
12: onions 2 medium (finely chopped)
13: red chilli powder 2 tsp
14: coriander powder 2 tsp
15: tomatoes 4 large (grind)
16: water 1/2 cup
17: fresh coriander handful
18: Bullet green chilli 3
Instructions

1: soak the dal overnight, wash and place it in a pressure cooker add salt, turmeric, and water and boil for 25 minutes in the pressure cooker, then keep aside. (can boil it in a normal pot as well).
2: heat oil add all dry spices, ginger & garlic paste, and fry on high flame for 1 minute.
3: add the onions and fry on high flame till the onions get golden.
4: then add red chilli powder, coriander powder, tomatoes, and water mix well, and cook on medium flame till the oil separates.
5: now add the boiled dal mix well and I added 1/2 tsp salt extra (taste for salt if less you can add more to your choice).
6: simmer on low flame for 12 minutes.
7: add fresh coriander, and green chilli mix.
8: Served hot with roti, naan, or paratha.
