Sindhi Pulao Recipe

Ingredients

1: oil 1/2 cup

 2: ginger & garlic paste 1 tbsp

 3: green cardamom 4

 4: cloves 7 to 8

 5: black peppercorn 7 to 8

 6: black cardamom 2

 7: cinnamon stick 3 pieces

 8: chicken 1 kg (cut in 12 pieces)

 9: tomatoes 4 large (chopped)

 10: red chilli powder 1 & 1/2 tsp

 11: turmeric 1/2 tsp

 12: cumin seeds 1tsp (dry roasted & crushed)

 13: salt 2 tsp

 14: biryani masala 3 tbsp

 15: yogurt 1/2 cup (room temp)

 16: bullet green chilli 6 

 17: fresh coriander handful

 18: mint leaves 15

 19: rice 1 kg (washed)

 20: water

 21: fresh ginger 2 inch piece (finely sliced)

Instructions

  1.  1: heat oil add ginger & garlic paste, green cardamom, cloves, black peppercorn, black cardamom, cinnamon sticks and fry for 2 minutes on high flame.

     2: then add chicken and fry on high flame till changes colour.

     3: now add tomatoes, red chilli powder, turmeric, salt, cumin roasted seeds, biryani masala, yogurt mix and add water 1 cup, cover and cook on low to medium till the chicken gets tender.

     4: add green chilli, coriander leaves, mint leaves, water mix and cook on high flame till the water dries.

     5: now heat the tawa and place the pot on it, add fresh ginger, cover the lid with a tea towel, first 10 minuets on high flame and then simmer on low flame for 7 to 8 minutes. 

     6: serve hot and enjoy.
