ROGHNI KORMA RECIPE

Ingredients

1: chicken 1 kg (cut in 12 pieces)

 2: ginger & garlic paste 2 tbsp

 3: cashew nuts 10 (grinned to a powder)

 4: almonds 10 (grinned to a powder)

 5: desiccated coconut 2 tbsp

 6: thick greek yogurt 1 cup

 7: fried onions 4 tbsp

 8: garam masala powder ½ tsp

 9: nutmeg ¼ tsp

 10: mace ¼ tsp

 11: cloves 6

 12: green cardamom powder 1 tsp

 13: cumin seeds 2 tsp

 14: red chilli powder 1 & ½ tsp

 15: salt 1 & ½ tsp

 16: cinnamon stick 1 piece

 17: ghee or oil ¾ cup

 18: fresh coriander 4 tbsp

 19: green chilli 3 (sliced)

Instructions

  1.  1: in a bowl add chicken, salt, ginger & garlic paste, yogurt mix and keep in fridge for 30 minutes.

     2: heat ghee or oil, add cloves, cinnamon stick, cumin seeds fry on high flame for a minute.

     3: then add the chicken, mace, nutmeg, green cardamom powder, red chilli powder, almonds, cashew nuts, coconut   mix and add water 1 cup, mix wait for a boil on high flame, then cover and cook on low to medium till the oil comes on   surface and chicken tender.

     4: now add fried onions, green chilli, garam masala powder cover and simmer on low flame for 8 minutes.

     5: add fresh coriander mix.

     6: serve hot with Shermal, Roghni Naan.
