RANI MUTTON PILAU

Ingredients

1: mutton meat 1 kg

 2: rice 1/2 kg (wash and soak it for 20 to 30 minutes)

 3: ginger & garlic paste 1 & 1/2 tbsp

 4: cinnamon stick 1 piece

 5: salt 2 tsp

 6: black pepper corn 8

 7: green cardamom 4

 8: cloves 6

 9: black cardamom 2

 10: red chilli powder 1 tsp

 11: salt 1 tsp

 12: thick greek yogurt 2 cups

 13: fried onions 1 cup

 14: cashew nuts 10 (fried)

 15: raisins 2 tbsp (fried)

 16: almonds 6 (sliced)

 17: pistachio 10 (sliced

 18: saffron 1/4 tsp (mixed with 1/4 cup milk)

 19: oil 1 cup

Instructions

  1. RANI MUTTON PILAU

     1: heat oil add cinnamon stick, black pepper corn, green cardamom, black cardamom, cloves, ginger & garlic paste fry  for 1 minute, on high flame.

     2: add meat, red chilli powder, salt 1 tsp mix and fry on high flame till the meat changes colour.

     3: now add yogurt mix it, then add water 3 glass, wait for a boil on high flame, cover and cook on low to medium flame  till the meat is tender.

     4: once the meat is tender add the soaked rice, salt 2 tsp, water 3 to 4 cups (or as i have showed in the video),wait for  a boil on high flame add the fried onions, cover and cook till the water dries.

     5: now add the milk and saffron mixture, cover the lid with a tea towel and simmer for 10 minutes on low flame.

     6: garnish rice with nuts, raisins and serve hot.
