Rajasthani Malai Pyaz

Ingredients

 1: mustard oil 5 tbsp (or) any oil you like

 2: cumin seeds 1 tsp

 3: asafoetida 1/4 tsp

 4: dry red chilli 4

 5: bay leaves 3

 6: ginger 1 tbsp (crushed)

 7: garlic 1 tsp (crushed)

 8: onions 5 medium (cut in 4 and separate the layers)

 9: turmeric 1/2 tsp

 10: red chilli powder 1 tsp

 11: coriander powder 1 & 1/2 tsp

 12: green chilli 5

 13: dry fenugreek leaves 1 tbsp

 14: cream 1 & 1/2 cup

 15: dry mango powder 1 tsp

 16: salt 1 tsp

 17: fresh coriander 1 tbsp

 

Instructions

  1. 1: heat the mustard oil and the add cumin seeds, asafoetida, dry red chilli, bay leaves, ginger, garlic and sauté on medium flame for 2 minutes.

     2: now add the onions and cook till gets soft on medium flame.

     3: add turmeric, red chilli, coriander powder and cook on medium flame for 4 minutes.

     4: then add green chilli, fenugreek leaves, cream, dry mango powder mix and cook on medium flame till the oil comes on the surface.

     5: now add salt and cook for further 4 minutes.

     6: add fresh coriander mix.

     7: serve hot with roti, paratha or puri.
