RAINBOW CAKE

Ingredients

 

 

Cake:

1: plain flour 3 cups

2: sugar 2&1/3 cups

3: egg whites 5 (room temperature)

4: vanilla essence 1 tbs

5: salt 1/2 ts

6: baking powder 2 tbs

7: unsalted butter 225 g (room temperature)

8: milk 1&1/2 cups

9: food colours red, orange, yellow, green, blue, purple 1tsp each (or as bright you like can add more)

10:6 foil tins of 9 inch (greased and add the baking paper at the bottom)

 

Frosting

1: cream cheese 600g

2: white chocolate 450g

3: icing sugar 2 cups

4: butter 60g (room temperature)

5: vanilla essence 1 tbs

6: smarties or m&m 3 packets for different colours

 

 

Instructions

  1. RAINBOW CAKE

     

     

     Preheat The Oven 350f, 180c, Gas Mark 4.

    1: grease the 6 cake tins and line the bottom with baking paper and grease it again.

    2: sieve the flour, salt, baking powder and keep aside.

    3: beat the sugar, butter till creamy and smooth.

    4: then add the egg whites slowly and beat till combined.

    5: now add the vanilla, flour, milk and beat then add the remaining flour and milk and beat till well combined.

    6: now divide the batter in 6 bowls (1 cup and if remaining then again divide)and add the colours in each of them and mix the colours.

    7: transfer the batter in the 6 greased pans and bake them for 12 to 15 minutes each or in batches.

    8: remove them from the oven and cool it for 10 minutes in the tin, then remove from the tin and cool completely and remove the baking paper.

     

    Frosting:

    1: melt the chocolate till smooth on a double boiler pot, then keep aside to cool down slightly.

    2: in a bowl add the cream cheese, butter, vanilla essence and beat till creamy.

    3: then add the powder sugar and beat till combined.

    4: now add the melted chocolate and beat again.

     

    Assemble Cake:

    1: place the cake on a plater any colour u like and spread the frosting 1 cup then place the other cake and carry on the same till the last cake and cover all around and decorate the cake with the m&m or smarties.

    2: serve and enjoy.
