Quick Aloo Palak – Pakistani-Style Spinach and Potato

1: mustard oil 1/3 cup (heat it to a point when smoke rises, then leave to cool and use as required)

2: cumin seeds 1 & 1/2 tsp

3: onion 1 medium (chopped)

4: asafoetida ( Hing ) 1/4 tsp (heaped)

5: dry red chilli 2

6: ginger 1 & 1/2 inch (finely chopped)

7: garlic 1 & 1/2 tbsp (finely chopped)

8: green chilli 3 (chopped)

9: tomatoes 2 large (sliced)

10: coriander powder 1 tsp (heaped)

11: salt 1 tsp

12: turmeric 1/2 tsp

13: red chilli powder 1 & 1/2 tsp

14: water 1/2 cup

15: potatoes 500g (pealed, cut in cubes)

16: water 1 cup 

17: spinach 795g (1 can)

18: dry fenugreek leaves 1 tbsp (heaped)

19: garam masala powder 1 tsp

20: clarified butter ( desi ghee )  2 tbsp

Instructions

  1. 1: heat oil add cumin seeds, onion and fry till changes colour on high flame.

    2: add asafoetida, dry red chilli, ginger, garlic fry for 2 minutes, on high flame.

    3: then add green chilli, tomatoes, coriander powder, salt, red chilli powder, turmeric, water mix cook on medium flame till the tomatoes reduce and oil separates.

    4: add potatoes and fry for 2 to 3 minutes on high flame, add water mix cook on medium flame till the potatoes are tender and oil separates.

    5: then add the spinach mix well add fenugreek leaves, garam masala powder mix and simmer on low flame for 12 minutes.

    6: just before you serve add 2 tbsp clarified butter mix on high flame for 2 minutes.

    7: serve hot with Roti or Paratha.
