Punjabi Aloo Baingan

Ingredients

 

 To Make a Paste:

 1: ginger 3 inch piece (peeled)

 2: garlic 15 cloves

 3: green chilli 6

 

 Other Ingredients:

 1: oil 1/3 cup

 2: cumin seeds 2 tsp

 3: bay leaves 2

 4: onions 2 medium (finely chopped)

 5: tomatoes 3 (sliced)

 6: salt 1 & 1/2 tsp

 7: red chilli powder 1 & 1/2 tsp

 8: corainder powder 3 tsp

 9: turmeric 1/2 tsp

10: potatoes 800g (peeled & cut in cubs)

11: baingan 800g (cut in cubs)(eggplant)

12: dry mango powder 1 tsp

13: garam masala powder 1 tsp

14: dry fenugreek leaves 2 tbsp

15: fresh coriander handful

16: green chilli 4 (sliced)

 

Instructions

  1. Punjabi Aloo Baingan

     1: grind ginger, garlic, green chilli with a little oil and keep aside.

     2: heat oil add cumin, bay leaves, grind ginger & garlic paste and fry on high flame for 4 minutes.

     3: add onions and fry on high flame till gets soft.

     4: now add tomatoes, salt, red chilli, corainder powder, turmeric mix well add water 1 cup cover and cook on low to medium flame till the tomatoes reduce and oil seperates.

     5: add potatoes and cook for 4 minutes on high flame.

     6: now add baingan and cook for 2 minutes, cover and simmer for 10 minutes.

     7: add water 100 ml mix, cover & cook on low to medum till the vegetables are soft.

     8: now add dry mango powder, garam masala powder mix well add dry fenugreek, corainder, green chilli mix.

     9: serve hot with roti, paratha, boiled rice.
