Ingredients

 Ingredients

 

 For the First Marination:

- 7 chicken drumsticks (approximately 1 kg)

- Water for soaking

- 1 teaspoon salt

- 2 tablespoons vinegar

 

 For the Second Marination:

- 2 tablespoons lemon juice

- 1 teaspoon red chilli powder

- 1 teaspoon garam masala powder

- 1 teaspoon salt

- 2 tablespoons ginger & garlic paste

 

 Other Ingredients:

- 300g ready-made peri peri chicken fry mix

- 1 heaped tablespoon gram flour

- Warm water

- Oil for frying

Instructions

  1.  First Marination:

     1. In a bowl, combine the chicken drumsticks with water, 1 teaspoon of salt, and 2 tablespoons of vinegar. Allow the chicken to soak for at least two hours, or preferably overnight.

     

     Second Marination:

     1. In another bowl, add the marinated chicken and mix it with lemon juice, red chilli powder, garam masala powder, 1 teaspoon of salt, and 2 tablespoons of ginger & garlic paste. Ensure the chicken is well coated. Leave it to marinate for 1 hour.

     

     Coating the Chicken:

     1. In a plate, mix the ready-made peri peri chicken fry mix with a heaped tablespoon of gram flour. Thoroughly combine the ingredients.

     

     2. Take one piece of marinated chicken at a time and roll it in the dry peri peri mix. Then, dip it in warm water and roll it in the peri peri mix once more. Set aside.

     

     Frying:

     1. Heat oil in a deep frying pan or skillet.

     

     2. Carefully place the chicken drumsticks in the hot oil. Fry them on high flame for approximately 4 minutes.

     

     3. Reduce the flame to low to medium and continue frying for about 12 minutes or until the chicken is tender and thoroughly cooked.

     

     4. Once fried, place the chicken drumsticks on a paper towel to remove excess oil.

     

     Serving:
