NAWABI CHOPS RECIPE

Ingredients

1: mutton chops 1 kg

 2: ginger & garlic paste 1 tbsp (heaped)

 3: green cardamom powder 1/2 tsp

 4: curry leaves 20

 5: green chilli 3 (sliced)

 6: salt 1 tsp

 7: red chilli powder 1 & 1/2 tsp

 8: coriander powder 2 tsp (heaped)

 9: cumin seeds 2 tsp (dry roasted & crushed)

 10: nutmeg 1/4 tsp

 11: mace 1/4 tsp

 12: garam masala powder 1/2 tsp

 13: turmeric 1/2 tsp

 14: lemon juice 2 tbsp

 15: kewra water 2 tsp mixed with saffron 1/4 tsp

 16: cashew nuts or almonds 2 tbsp (grind to a smooth paste with cream)

 17: onion 3 large (grind)

 18: yogurt 1 cup

 19: potatoes 4 large (boiled with 1/2 tsp salt and then fried)

 20: oil 3/4 cup

 21: fresh coriander handful

 

Instructions

  1.  1: heat oIl add curry leaves, onion, ginger & garlic paste fry on high flame till changes colour.

     2: add meat and fry till changes colour on high flame.

     3: now add yogurt, cashew nut paste, red chilli powder, coriander powder, nutmeg, mace, turmeric, salt, roasted cumin, water 2 glass, wait for a boil on high flame, then cover and cook on low to medium flame till the meat is tender and oil comes on surface.

     4: then add green chilli, lemon juice, fried potatoes, fresh coriander, garam masala powder, green cardamom powder,  kewra and saffron mixture mix well and simmer for 6 minutes on low flame.

     5: serve hot with Naan or Roghni Naan.
