MUTTON PAYA RECIPE ( GOAT TROTTERS)

Ingredients

1: mutton paya 8 pieces

 2: thick greek yogurt 1 cup

 3: ginger & garlic paste 3 tbsp

 4: coriander powder 3 tbsp

 5: bullet green chilli 4

 6: green cardamom 6

 7: black pepper corn 10

 8: black cardamom 3

 9: cloves 8

 10: fennel seeds 1 tsp

 11: star anise 2

 12: cinnamon stick 2

 13: cumin seeds 1 tsp

 14: turmeric 1/2 tsp

 15: garam masala powder 1 tsp

 16: salt 2 tsp

 17: red chilli powder 2 tsp

 18: onions 2 large (grinned)

 19: water 8 cups

 20: ghee 1/2 cup

 21: fresh coriander handful

 

 FOR GARNISHING:

 1: fresh ginger 1 inch (Julian)

 2: green chillies 5 (sliced)

 3: lemon 1 (sliced)

Instructions

  1. MUTTON PAYA RECIPE ( GOAT TROTTERS)

     1: heat ghee add the green cardamom, pepper corns, black cardamom, cloves, fennel seeds, cinnamon stick, cumin   seeds, star anise fry on high flame.

     2: add onion, ginger & garlic paste and fry on high flame till the colour changes.

     3: now add coriander powder, salt, red chilli powder, turmeric, yogurt mix well, add the paya and cook on high flame till   the oil separates.

     4: then add water mix and wait for a boil on high flame, then cover and cook on low flame for 5 to 6 hours till the paya   are tender.

     5: add garam masala powder, green chilli, coriander and cook for 10 minutes on low flame.

     6: serve hot with naan.
