MUTTON KARAHI

Ingredients

For Karahi Masala Powder:

1: coriander seeds 4 tbsp

2: cumin seeds 2 tbsp (dry roasted & crushed)

3: black pepper corns 1 tbsp

4: fenugreek seeds 1 tsp

5: cinnamon sticks 4 pieces

6: bay leaves 6

7: dry red chilli 6

8: nutmeg powder 1/2 tsp

9: red chilli powder 1 tbsp

10: turmeric 1 tsp

11: garam masala powder 1 tsp

12: paprika powder 1 tbsp

13: salt 2 tsp

 

For Curry:

1: mutton 1 kg

2: ginger & garlic paste 1 tbsp

3: tomatoes 4 medium (grind)

4: onions 2 medium (grind)

5: green chilli 2

6: oil 1/2 cup (or) ghee 1/2 cup

7: salt 1 tsp

8: fresh coriander handful

9: karahi masala 2 tbsp (heaped) (or to your taste, can add more)

  1. 1: to make the karahi masala powder, in a blender add coriander seeds, cumin dry roasted, dry red chilli, black peppercorn, fenugreek seeds, cinnamon stick, and bay leaves and grind it to a powder.

    2: Then Place the grinned masala in a bowl and add red chilli powder, salt, turmeric, nutmeg, and garam masala powder mix well (store in an air-tight jar and use whenever you want to use it in chicken, or vegetable curry).

    3: to make the curry: heat ghee or oil add meat, ginger & garlic paste and fry the meat till changes colour, on high flame.

    4: now add the karahi masala powder, salt, paprika powder, tomato and onion grind together and add that, water 1 glass mix, wait for a boil on high flame, cover and cook on low to medium flame till the meat is cooked and the ghee comes on surface.

    5: add green chilli, and fresh coriander mix well.

    6: Served hot with roti, or naan.

Note

NOTE: you can add more red chili powder in the curry apart from the karahi masala powder if you like it more spicy. can store the karahi masala powder for a few months.
