 Marination:

 1: mutton meat 1 kg

 2: bay leaves 3

 3: green chilli 3 ( chopped)

 4: onions 3 large (finely sliced)

 5: ginger & garlic paste 1 & 1/2 tbsp

 6: yogurt 2 cups

 7: cinnamon sticks 3

 8: black cardamom 2

 9: green cardamom 10

10: cloves 8

11: black peppercorn 10

12: salt 1 & 1/2 tsp

13: turmeric 1 tsp

14: deggi mirch powder 1 tbsp

15: red chilli powder 1 & 1/2 tsp

16: coriander powder 2 tbsp

 

 Other Ingredients:

 1: clarified butter 3/4 cup

 2: cumin seeds 1 tsp

 3: asafoetida 1/2 tsp

 4: green chilli 2 (chopped)

 5: ginger 1 inch (Julian cut)

 6: onions 2 large (finely sliced)

 7: salt 1/2 tsp

 8: coriander seeds 2 tbsp (crushed)

 9: green chilli 4 to 5

10: coriander 1/2 cup

 

Instructions

  1.  1: in a bowl add meat and all ingredients under marination, mix well and keep aside for 2 hours or over night.

     2: heat the clarified butter add cumin, asafoetida, green chilli, ginger, onions, salt and fry on high flame till the onions get dark.

     3: add the marinated meat and cook for 12 minutes on high flame.

     4: now add coriander seeds mix and cook further 3 minutes on high flame.

     5: add water 1 & 1/2 glass mix, cover and cook on low to medium flame till the meat is tender and butter comes on the surface.

     6: add green chilli, coriander mix.

     7: garnish with some ginger, green chilli.

     8: serve hot with roti, naan, rice.
