Masaledar Pulao Recipe

Ingredients

To Marinate Chicken:

 1: chicken 1 kg

 2: coriander powder 1 & 1/2 tbsp

 3: crushed red chilli 1 & 1/2 tsp

 4: red chilli powder 1 & 1/2 tsp

 5: salt 1 & 1/2 tsp

 6: turmeric 1/2 tsp

 7: ginger & garlic paste 1 & 1/2 tbsp

 

To Make Rice:

 1: oil 3/4 cup

 2: cloves 7

 3: green cardamom 6

 4: cinnamon stick 3 inch

 5: black cardamom 2 

 6: cumin seeds 1 & 1/2 tsp

 7: star anise 1

 8: dry curry leaves 1 tsp (or fresh) 15 leaves

 9: green chilli 6 

10: onion 1 large (finely sliced)

11: tomatoes 5 large (chopped)

12: dry fenugreek leaves 2 tbsp

13: yogurt 1 cup

14: rice 1 kg (washed)

15: water (for 1 cup rice add 2 cups water)

16: lemon juice 2 tbsp

17: gatam masala powder 1 tsp

18: salt 2 tsp

  1. 1: in a bowl add all ingredients under chicken marination, mix well, and keep aside for an hour.

    2: heat oil add all dry spices, green chili, curry leaves, and onions, and fry on high flame till the onions get soft.

    3: add the marinated chicken and fry on high flame for 5 minutes.

    4: then add tomatoes, dry fenugreek leaves, and yogurt mix well, cover, and cook on low to medium flame till the chicken is tender and the oil separates.

    5: now add the washed rice, water, lemon juice, salt, garam masala powder mix well, and cook on high flame till the water dries.

    6: now cover the lid with a tea towel & place it on the handi, place the handi on a tawa and keep the flame high for 10 minutes, and simmer it for 5 minutes on low flame.

    7: serve hot and enjoy!
