KUWAITI BIRYANI

Ingredients

 1: boneless chicken 1 kg (cut in 2 inch pieces)

 2: ginger 2 inch (grated)

 3: garlic 6 pieces (crushed)

 4: saffron essences 1 tbsp or kewra water 2 tbsp

 5: tomato paste 4 tbs

 6: garam masala powder 4 tbsp

 7: salt 1/4 tsp

 8: turmeric 1/2 tsp

 9: chicken cubes 2

 10: lemon juice 2 tbsp

 11: yogurt 1 cup

 12: tomatoes 4 medium

 13: onions 2 large

 14: fresh coriander handful

 15: fresh mint leaves 30

 16: rice 750g (boiled with salt 1 & 1/2 tbsp)

 17: ghee or oil 1/2 cup

Instructions

  1.  1: heat ghee add the onions and fry till light golden, on high flame.

     2: add ginger, garlic and fry for 5 minutes, on high flame.

     3: now add the chicken and fry till changes colour, on high flame.

     4: then add tomatoes, tomato paste, lemon juice, turmeric, garam masala powder, yogurt, chicken cubes, salt mix well,  wait for a boil on high flame and then cover and cook on medium to high flame till the chicken is tender and ghee  comes on surface.

     5: for assembling: in a large pot add half boiled rice, chicken curry, mint leaves, coriander leaves, remaining rice, the  essences, cover the pot with the lid and place it on the stove first 5 minutes on high flame and then 5 to 7 minutes on  low flame.

     6: serve hot with mint or garlic chutney.
