KHAJUR IMLI CHUTNEY
Ingredients
1: soft dates (khajoor) 300g (deseed)
2: gur (jaggery) 300g
3: imli (Tamarind) water 2 cups (soak 100g imli in water squeeze, and strain the water)
4: roasted crushed cumin seeds 1tbs
5: ginger powder 1/2ts
6: red chilli powder 1ts (heaped)
7: black salt 1/2 tsp
8: salt 1ts
9: water 1 small glass

KHAJUR IMLI CHUTNEY
1: in a pan add dates, gur (jaggery), black salt, red chili powder, ginger powder, cumin, salt, and water mix and wait for a boil on high flame, then lower the flame to low to medium and cook till the water dries and keep mashing the dates (khajoor).
2: then add the imli (Tamarind) water and mix well.
3: grind to a paste.
4: use for chaat - pakoray - dahi bhalay.
5: keep in the fridge, in an airtight jar.
