KASTOORI CHICKEN BOTI

Ingredients

For Marination:

 1: chicken breast 1 & 1/2 kg (cut into 2-inch pieces)

 2: ginger & garlic paste 1 tbsp

 3: green chilli 10 (grind to a paste)

 4: salt 1 tsp

 5: crushed black pepper 1 tsp

 6: papaya paste 1 tbsp

 7: lemon juice 2 tbsp

 8: gram flour paste (as below)

 9: coal for smoking the chicken

 10: oil for cooking 3 tbsp

 Gram Flour Paste:

 1: unsalted butter 100g

 2: gram flour 4 tbsp

 3: bread crumbs 2 tbsp (dry or fresh)

 4: oil 2 tbsp

 For Coating:

 1: Cheddar cheese 1 cup

 2: egg 1

 3: black cumin seeds 1tsp

 4: gram flour paste 4 tsp (as above)

Instructions

  1. KASTOORI CHICKEN BOTI

    1: in a pan melt butter with oil on medium flame.

    2: then add gram flour and cook on low to medium flame till you can smell the aroma of the gram flour.

    3: now take out 4tsp of this and keep aside & in the rest past add bread crumbs mix well.

    4: in a bowl add chicken, ginger & garlic paste, green chilli paste, salt, black pepper, papaya paste, lemon juice, and the gram flour paste mix well and keep aside for 30 minutes.

    5: heat oil and add the marinated chicken, mix well wait for a boil on high flame, then cook on low to medium till the chicken is cooked completely.

    6: heat a coal, place a foil then coal a little oil cover till the smoke settles.

    7: preheat oven to 180c, 350f, gas mark 4, now mix the gram flour mixture, egg, cumin beat it, transfer the chicken to a baking dish and spread the mixture on the chicken, and add the cheese on top, bake it for 7 to 8 minutes.

    8: garnish it with a little fresh coriander.

    9: Served hot with puri or puri paratha.
