Gosht Khada Masala

Ingredients

To Make The Masala:

 1: water 4 cups

 2: onions 3 large

 3: garlic cloves 8

 4: green cardamom 6

 

 Other Ingredients:

 1: oil 1/2 cup

 2: butter 50g

 3: onions 1 small (finely sliced)

 4: green chilli 5

 5: cinnamon stick 2 pieces

 6: black cardamom 2 pieces

 7: cloves 5

 8: black peppercorn 10

 9: dry whole red chilli 9

10: salt 1 & 1/2 tsp

11: cumin seeds 2 tsp (dry roasted & crushed)

12: white pepper 1 tsp

13: red chilli powder 1 & 1/2 tsp

14: crushed red chilli 1 tsp

15: turmeric 1/2 tsp

16: desiccated coconut 1 tbsp

17: ginger & garlic paste 1 & 1/2 tbsp

18: yogurt 1/2 cup

19: ginger 2 inch pieces (sliced)

20: tomatoes 4 large (grind)

21: mutton 1kg (boiled 70%)

22: fresh coriander hand full

 

 For Garnishing:

 1: green chilli 3 (sliced)

 2: ginger 1 inch (sliced)

Instructions

  1. 1: in a pot add water, onions, garlic, green cardamom and cook till 3 cups of water is left on high flame.

    2: then grind the onion mixture to a paste.

    3: place the onion mixture in a pot with oil, butter, onion, green chilli, cinnamon stick, black cardamom, cloves, black peppercorn, whole dry red chilli, cumin, white pepper, chilli powder, crushed red chilli, turmeric, desiccated coconut, ginger & garlic paste, yogurt, ginger, tomatoes mix and wait for a boil on high flame.

    4: now add the boiled mutton mix cover and cook on medium flame till the oil separates.

    5: then add fresh coriander, mix well.

    6: garnish with a few green chilli, ginger.

    7: serve hot with naan, roti.
