Gobi Ka Paratha
Ingredients
Step One For The Filling:
1: cauliflower 1kg (gobi grated)
2: ginger 3 inch piece (grated)
3: salt 1 tsp
Other Ingredients For The Filling:
1: carom seeds 1 tsp
2: turmeric 1/4 tsp
3: cumin seeds 2 tsp (dry roasted & crushed)
4: salt 1/4 tsp
5: chat masala 1 tsp
6: garam masala powder 1 tsp
7: red chilli powder 1 tsp
8: coriander powder 1 & 1/2 tsp
9: green chilli 2 (chopped)
10:dry fenugreek leaves 2 tbsp
11:cottage cheese 200g (grated)
For Frying:
1: butter, oil, ghee (as you prefer)
Instructions

1: grate cauliflower, ginger and add salt, then leave for 20 minutes and then place it n a tea towel and squeeze the water out and place it back in a bowel.
2: now add carom seeds, turmeric powder, cumin seeds, salt, chat masala, garam masala powder, red chilli powder, coriander powder, green chilli, dry fenugreek leaves, cottage cheese mix well.
3: now take the dough and make small balls, flatten the sides and roll in a quarter plate size, add the filling and seal the dough as shown in the video.
4: heat the flat pan.
5: roll the stuffed dough in flour and the roll the dough.
6: place the rolled paratha on the hot pan and cook as shown in the video, add butter, oil, ghee what ever you prefer and fry the paratha on both sides, then place it on paper towel to remove extra oil.
7: serve hot with pickle or Yogurt.
