Fluffy Egg Muffins

Ingredients

 Ingredients:

 

 - 6 eggs

 

 - 1/2 tsp oregano

 

 - 1/2 tsp salt

 

 - 1 tsp crushed black pepper

 

 - 1/4 cup cheddar cheese

 

 - 1 small bell pepper, finely chopped

 

 - 2 spring onions, chopped

 

 - 1 sausage, chopped

 

 - 1/3 cup mozzarella cheese

 

 - 1 tsp crushed red chili

Instructions

  1.  Preheat the oven to 350°F (180°C, Gas Mark 4)

     

    1. In a bowl, beat together eggs, oregano, salt, black pepper, and cheddar cheese.

     

    1. Grease the cupcake tin and add bell peppers, spring onions, sausage, mozzarella cheese, egg mixture, and crushed red chili.

     

    1. Place the tray in the oven and bake for 20 minutes or until the muffins are fluffy and golden.
