Egg Masala Curry
Ingredients
To Marinate:
1: egg 10 (boiled & put cuts on them)
2: red chilli powder 1/2 tsp
3: turmeric 1/4 tsp
4: salt 1/2 tsp
For Curry:
1: oil 1/3 cup
2: cumin seeds 1 tsp
3: green chilli 2 (chopped)
4: onions 2 medium (grind)
5: ginger & garlic paste 1 tbsp
6: coriander powder 2 tsp
7: turmeric 1/2 tsp
8: salt 1 tsp
9: garam masala powder 1/2 tsp
10: red chilli powder 1 & 1/2 tsp
11: Dry fenugreek leaves 1 tbsp
12: tomato ketchup 6 tbsp
13: tomatoes 2 medium (grind)
14: green chilli 4
15: fresh coriander hand full

Egg Masala Curry
1: in a bowl add the boiled eggs add red chilli powder, salt, turmeric and mix well.
2: heat oil add the eggs and fry for 1 to 2 minutes on low to medium flame and take them out a keep aside.
3: in the same oil add cumin seeds, green chilli, onion, ginger & garlic paste and fry on high flame till changes colour.
4: now add coriander powder, turmeric, salt, garam masala powder, red chilli powder, fenugreek leaves, tomato ketchup, tomatoes mix well and cook on high flame for 1 to 2 minutes.
5: add water 1 glass mix, cover and cook on low to medium flame till the oil comes on the surface.
6: then add the eggs, water 1/2 cup mix and cook for 2 to 3 minutes on medium flame or till the oil comes on the surface.
7: then add green chilli, fresh coriander mix.
8: serve hot with roti, naan.
