Dhaba Chicken Fry

Ingredients

 

 

Take your taste buds on a journey with our Dhaba-style Chicken Fry recipe. Marinated in a rich blend of spices and simmered to perfection, this dish is a true feast for your senses. Perfect with paratha, roti, naan, or rice.

 

For Marination:

 

- 1 kg Chicken

- 50g Tamarind mixed with 125ml Water

- 1 1/2 tsp Red Chilli Powder

- 1 tbsp Kashmiri Chilli Powder

- 1 1/2 tsp Salt

- 1 tsp Turmeric

- 1 tbsp Ginger & Garlic Paste

To Make the Curry:

 

- 2 Large Onions (grind)

- 6 Green Chillies

- 2 1/2-inch Ginger

- 10 Cloves Garlic

- 100g Butter

- 1 tbsp Curry Leaves

- 150ml Oil

- Handful of Coriander Leaves

- 3 Bullet Green Chillies (sliced)

For the Special Garam Masala:

 

- 1 1/2 tbsp Coriander Seeds

- 1 tbsp Cumin Seeds

- 2 Cinnamon Sticks

- 1 tbsp Fennel Seeds

- 1/2 tsp Black Peppercorns

- 12 Cloves

- 1 tsp Poppy Seeds (or 12 Cashew Nuts)

- 8 Green Cardamom Pods

- 1 Star Anise

- 2 Blades of Mace

- 2 Small Pieces of Nutmeg

- 1/2 tsp Mustard Seeds

- 1/2 tsp Nigella Seeds

- 2 Black Cardamom Pods

- 3 Bay Leaves

 

 

Instructions

  1. Dhaba Chicken Fry

     

    1. Marinate the Chicken:

       - Mix the chicken with tamarind water, red chilli powder, Kashmiri chilli powder, salt, turmeric, and ginger & garlic paste in a bowl. Ensure the chicken is evenly coated. Set aside to marinate.

    1. Prepare the Garam Masala:

       - In a frying pan, dry roast all the ingredients listed under "Special Garam Masala" until they turn lightly golden and release a fragrant aroma. Let it cool, then grind it into a fine powder.

    1. Start the Curry:

       - Heat oil in a pan and add the crushed ginger, garlic, and green chilli mixture. Fry on high flame for 1 to 2 minutes.

    1. Add Aromatics:

       - Stir in the curry leaves and onion paste. Fry on high flame until the mixture turns golden.

    1. Incorporate the Marinated Chicken:

       - Add the marinated chicken, mix well, and fry on high flame for a few minutes.

    1. Introduce the Garam Masala:

       - Add 2 tbsp of the roasted and ground masala powder and butter. Mix, cover, and cook on low flame until the chicken becomes tender. You can add 1 cup of water if needed.

    1. Final Touch:

       - Add fresh coriander and sliced green chillies. Mix everything thoroughly.

    1. Serve Hot and Enjoy:
