Deigi Aloo Kofta

Ingredients

For Making Koftas:

 1: onion 1 large

 2: green chilli 6

 3: fresh coriander 1/4 cup

 4: ginger & garlic paste 2 tbsp (heaped)

 5: thick yogurt 3 tbsp

 6: fried onions 3 tbsp

 7: bread slices 2 medium (soak in water & then squeeze the water)

 8: almonds 20 (grind to a powder)

 9: gram flour 4 tbsp (dry roasted)

10: salt 1 tsp (heaped)

11: red chilli powder 1 tsp (heaped)

12: garam masala powder 1 tsp

13: coriander powder 2 tbsp

14: mince beef 1 kg (or) mutton mince

 

 For Making Curry:

 1: thick yogurt 2 cups

 2: coriander powder 2 tbsp (heaped)

 3: cumin seeds 2 tbsp (dry roasted & crushed)

 4: garam masala powder 1 tsp

 5: salt 2 tsp

 6: red chilli powder 2 tsp (heaped)

 7: ginger & garlic paste 2 & 1/2 tbsp

 8: fried onions 1 cup 

 

 Other Ingredients:

 1: oil 3/4 cup

 2: black cardamom 3

 3: cloves 8

 4: black pepper corn 20

 5: star anise 2

 6: green cardamom 6

 7: cinnamon stick 2

 8: cumin seeds 2 tsp

 9: potatoes 1 kg (peeled and cut on cubs)

10: dry fenugreek leaves 2 tsp

11: nutmeg 1/4 tsp

12: mace 1/4 tsp

13: fresh ginger 2 inch (Julian cut)

14: bullet green chilli 5

15: fresh coriander handful

Instructions

  1.  1: in a chopper add onions, green chilli, fresh coriander and grind till combined.

     2: then add ginger & garlic paste, yogurt, fried onions, bread, almonds, gram flour, salt, red chilli powder, garam masala powder, coriander powder and grind till combined.

     3: now add mince and grind till the mixture is smooth and combined than remove it from the chopper.

     4: to make the curry masala: in a bowl add yogurt, coriander powder, cumin, garam masala powder, salt, red chilli, ginger & garlic paste, fried onions mix and keep aside.

     5: grease your palms and make round shape kofta & keep aside.

     6: heat oil add black cardamom, cloves, black pepper corns, star anise, green cardamom, cumin seeds mix and add the yogurt mixture, water 1 cup mix and cook on medium flame for 5 minutes.

     7: now add the potatoes and cook on medium flame for 2 minutes, add water 6 cups (you can use less or more  water to your choice of the curry thickness)and wait for a boil on high flame.

     8: add the koftas and wait for a boil on high flame then cover and cook on medium flame for 20 minutes.

     9: now add dry fenugreek leaves, mace, nutmeg, ginger, coriander, green chilli mix and simmer on low flame for 5 minutes.

     10: serve hot with naan, roti, paratha.
