Cold Chicken Sandwich Recipe

Ingredients

To Boil Chicken:

- 400g boneless chicken

- 2 tbsp vinegar

- Water (enough to boil the chicken)

- 1 tsp garlic (minced)

- 1 tsp black pepper

- 1 tsp crushed red chilli

- 1 tsp salt

Other Ingredients:

- 5 boiled eggs (mashed)

- 1 small onion (finely chopped)

- 1 cup grated carrots (squeeze out water)

- ½ cup finely sliced cabbage

- 1 tsp sugar

- 1 tsp black pepper

- 1 tsp salt

- ½ tsp red chilli powder

- ⅓ cup of tomato ketchup

- ½ cup mayonnaise

- 2 tbsp coriander leaves (chopped)

For the Sandwich:

- Bread slices

Tomato ketchup

- Cheese slices

- Lettuce (sliced)

Butter or margarine

  1. 1. Boil the Chicken:

    - In a pan, combine boneless chicken, vinegar, garlic, black pepper, crushed red chilli, salt, and enough water to cover the chicken. Boil until the chicken is tender.

    - Once done, discard the water and shred the chicken.

     

    2. Prepare the Chicken Mixture:

    - In a large bowl, add the shredded chicken, mashed boiled eggs, onions, grated carrots, sliced cabbage, sugar, black pepper, salt, red chilli powder, tomato ketchup, mayonnaise, and chopped coriander. Mix everything thoroughly until well combined.

     

    3. Assemble the Sandwich:

    - Cut the crusts off the bread slices for a cleaner look.

    - Spread a thin layer of tomato ketchup on one slice of bread.

    - Add the chicken and egg mixture generously on top.

    - Place a cheese slice over the mixture, then cover with another bread slice.

    - Spread a little butter or margarine on the third slice of bread and place it on top. Add lettuce for extra crunch.

     

    4. Serve:

    - Your delicious cold chicken sandwich is ready! Serve with chips, fries, or a cold drink for the perfect meal.
