Classic Mutton Curry
Ingredients
For Making a Paste:
1: oil 5 tbsp
2: cashew nuts 20
3: onions medium or large 3 (sliced)
4: tomatoes 5 medium (sliced)
For Curry:
1: oil 1/2 cup
2: cumin seeds 1 & 1/2 tsp
3: green chilli 3 (chopped)
4: ginger & garlic paste 2 tbsp
5: mutton 1 kg
6: yellow food colour 1/4 tsp
7: coriander powder 1 & 1/2 tsp
8: salt 1 & 1/2 tsp
9: garam masala powder 1 tsp
10: red chilli powder 1 & 1/2 tsp
11: turmeric 1/2 tsp
12: dry fenugreek leaves 1 tbsp
13: green chilli 3 (chopped)
Instructions

1: in a frying pan heat 5 tbsp oil add cashew nuts, onions and soften the onions on high flame and then add the tomatoes and cook till gets soft, then leave it to cool and grind to a paste
2: heat oil add cumin seeds, green chilli, ginger & garlic paste and fry for 2 to 3 minutes on high flame.
3: then add the meat and fry till changes colour on high flame.
4: now add yellow food colour, coriander powder, salt, red chilli powder, turmeric, garam masala powder mix and add the grinned paste mix and fry the meat in this for 4 minutes on high flame.
5: add water 1 & 1/2 glass mix. wait for a boil and then cover and cook on low to medium flame till the mutton is tender and oil comes on surface.
6: now add dry fenugreek leaves, green chilli mix well.
7: Served hot with naan roti.
