Learn how to make the traditional Chum Chum, a popular sweet treat in Pakistani and Indian cuisine, with this step-by-step recipe.

1. Homemade Paneer (Cheese): Made from 8 cups of milk.

2. Water: 8 cups.

3. Sugar: 4 cups.

4. Homemade Ricotta Cheese (Khoya): 1/2 cup.

5. Icing Sugar: 4 tablespoons.

6. Arrowroot or Corn Flour: 2 tablespoons.

7. Green Cardamom (Elaichi) Powder: 1/2 teaspoon.

8. Sliced Pistachios: 1 tablespoon.

9. Food Coloring: 1/4 teaspoon (your choice of color).

10. Desiccated Coconut: 4 to 5 tablespoons.

Instructions

  1. 1. Prepare the Khoya Mixture: Combine homemade ricotta cheese (khoya) with green cardamom (elaichi) powder and icing sugar. Mix thoroughly.

    2. Knead the Cheese: Using your palms, knead the cheese for about 3 minutes until it sticks together and forms a dough-like consistency.

    3. Incorporate Arrowroot or Corn Flour: Add arrowroot or corn flour to the cheese dough and knead again.

    4. Add Food Coloring: Mix in the food coloring of your choice and knead the dough once more until the color is evenly distributed.

    5. Shape the Dough: Divide the dough into 16 equal portions. Shape them into baby carrot shapes for stuffing or oval shapes for traditional Chum Chum. Ensure there are no cracks.

    6. Prepare Sugar Syrup: In a pan, bring water to a boil. Add sugar and stir until fully dissolved to make the syrup (sheera).

    7. Cook the Chum Chum: Add the shaped Chum Chum pieces to the syrup. Cover and cook on a medium flame for 10 minutes without opening the lid.

    8. Flip and Cook: After 10 minutes, gently flip the Chum Chum pieces and cook for another 15 minutes covered, on medium flame.

    9. Cool Down: Transfer the Chum Chum to a separate bowl and let them cool down completely before stuffing and garnishing.

    10. Garnish and Serve: Once cooled, garnish the oval-shaped Chum Chum with desiccated coconut. For the baby carrot-shaped Chum Chum, make a cut in the middle, stuff with khoya, and garnish with desiccated coconut and sliced pistachios.
