Ingredients

 For Marination:

 1: green chilli 8

 2: ginger 3 inch (peeled)

 3: garlic 10 cloves

 4: red chilli powder 1 tbsp

 5: carom powder 1 & 1/2 tsp (ajwain)

 6: cumin powder 1 tbsp

 7: black pepper powder 1 tsp

 8: salt 3 tsp

 9: turmeric 1 tsp (levelled)

 10: garam masala powder 1 tsp

 11: dry fenugreek leaves 1 tbsp

 12: vinegar 1 & 1/2 tbsp

 13: lemon juice 3 to 4 tbsp

 14: chicken legs 2 kg (give cuts on the legs)

 

 For Steaming The Chicken:

 1: Water

 2: salt 1 tsp

 3: cinnamon stick 3-inch piece

 4: cloves 7 to 8

 5: black cardamom 2

 

For Serving Sides:

 1: potatoes 1 kg (peeled & boiled with salt 2 tsp)

 2: remaining marination

Instructions

  1. Chicken Steam Roast 2 Type

    1: grind the green chili, ginger, and garlic to a paste with a little water.

    2: in a bowl add the grind paste, red chilli powder, carom powder, cumin powder, black pepper powder, salt, turmeric, garam masala powder, dry fenugreek leaves, vinegar, lemon juice mix well.

    3: now rub the masala on the chicken as shown in the video and leave it for 1 to 2 hours or even overnight.

    4: boil water with salt, cinnamon stick, cloves, black cardamom.

    5: now place a pizza tray or any stand in which you can place the chicken and the chicken can be steamed.

    6: Place the chicken pieces, cover and steam them for 15 minutes on low to medium flame.

    7: now change the sides and steam further for 20 minutes (it depends on the size of the chicken legs can even take longer if too big)

    8: you can serve the chicken once steamed or heat oil and fry till gets golden on high flame.

    9: sprinkle chat masala.

    10: fry the boiled potatoes till get golden on high flame.

    11: heat oil 4 tbsp add the remaining marination and cook for 1 minute on high flame, then add water 1 cup and cook again on low flame till the oil comes on the surface.

    12: now add the potatoes and mix them well with the masala.

    13: Served hot with salad, naan, roti, or paratha.
