CHICKEN MAYO CROQUETTES

Ingredients

1: chicken mince 1kg

2: green chilli 5 to 6 (finely chopped)

3: salt 1ts (heaped)

4: black pepper powder 1 tsp

5: mustard paste or powder 1 tsp

Filling:

1: cheddar cheese 1&1/2 cup (grated)

2: mushroom 1 small can 325g (finely chopped)

3: sweet corn 1 can 325g

4: spring onions 2 (finely sliced)

5: mayonnaise 4 tbs

6: salt 1 tsp

7: black pepper 1 tsp

Coating:

1: eggs 2 or as many as required

2: dry bread crumbs 3 to 4 cups

3: oil for frying

Instructions

  1. CHICKEN MAYO CROQUETTES

    1: in a bowl add chicken mince, green chilli, salt, black pepper, mustard paste mix well, and keep aside.

    2: in a separate bowl mix together all the ingredients under filling & mix well.

    3: now grease your palms with a little oil & flatten the chicken mixture on your palms, add the filling a tbs and roll making sure the filling does not come out.

    4: then dip it in the egg, and roll in the bread crumbs.

    5: heat oil.

    6: now add the chicken and fry on medium heat till gets golden.

    7: Served hot with coleslaw & fries.

    Note: can freeze them as well.
