CHICKEN KORMA (SHADIYON WALA)

Ingredients

 1: chicken 1 kg

 2: fried onions 3 medium 

 3: yogurt 1/2 cup

 4: yogurt 1/2 cup

 5: Ginger & Garlic Paste 3 tsp

 6: coriander powder 3 tsp

 7: red chilli powder 1 tsp

 8: turmeric 1/2 tsp

 9: salt 1 tsp

 10: oil or Ghee 1 cup

 

For Making Korma Powder:

 1: bay leaves 3

 2: green cardamom 6

 3: cumin seeds 1 & 1/2 tsp

 4: cinnamon stick 2 pieces

 5: black cardamom 2

 6: cloves 7

 7: nutmeg 1/4 piece

 8: mace 2 pieces

 9: star anise 1/2

 

For Garnishing:

 1: kewra water 1 tsp

 2: fresh ginger 1-inch piece (Julian cut)

 

Instructions

  1. 1: in a blender add all whole spices under korma masala and grind to a powder (except bay leaves).

    2: in a bowl add chicken, grind masala powder, yogurt 1/2 cup mix well and leave it for 30 minutes.

    3: in a blender add the fried onion, yogurt 1/2 cup and grind till smooth.

    4: heat oil or ghee add bay leaves, ginger & garlic paste, and fry for 1 to 2 minutes on high flame.

    5: now add the marinated chicken, coriander powder, salt, red chili powder, and turmeric mix well and fry the chicken in this masala for 4 minutes, on high flame.

    6: add 1 cup of water, wait for a boil on high flame, and then cover and cook on low to medium flame till the chicken is tender and oil comes on the surface.

    7: now add the mixture of fried onions and yogurt, water 1 cup and mix well, cook on high flame for 4 to 5 minutes.

    8: now add the kewra water, and ginger mix and simmer for a few minutes.

    9: Served hot with naan, or roti.
