Ingredients

To Make a Paste:

- Water (as needed)

- 1 bulb of garlic

- 3 small tomatoes

- 2-inch piece of ginger

- 2 medium onions

- 6 green chillies

 

To Make Masala Powder:

- 20 cloves

- 1 ½ tsp fennel seeds

- 1 ½ tsp cumin seeds

- 12 green cardamoms

- 1 tbsp dry fenugreek leaves

 

Other Ingredients:

- 2 heaped tbsp wheat flour

- 1 ½ cup oil

- 1 ½ kg chicken

- ½ tsp nutmeg

- ½ tsp mace

- 1 tbsp Kashmiri mirch powder or paprika powder

- 1 tsp ginger powder

- 1 tsp turmeric powder

- 2 tsp red chilli powder

- 1 tsp garam masala powder

- 1 tsp black pepper

- 1 ½ tbsp salt

- 2 tsp coriander powder

- 4 bullet green chillies

 

Instructions

  1. 1. Prepare the Paste:

       - In a pan, add water, garlic, tomatoes, ginger, onions, and green chilies. Boil until the onions soften and the tomato skin peels off easily.

       - Once boiled, let it cool, discard the water, and grind the mixture into a smooth paste.

     

    2. Make the Masala Powder:

       - In a frying pan, dry roast the cloves, fennel seeds, cumin seeds, green cardamoms, and dry fenugreek leaves until fragrant. Let it cool and then grind it into a fine powder.

     

    3. Roast the Flour:

       - In a frying pan, dry roast the wheat flour until it turns light golden. Set aside.

     

    4. Cook the Chicken:

       - Heat oil in a large pan, add the chicken, and fry on high flame until it changes color.

     

    5. Add Spices:

       - Add the prepared masala powder, nutmeg, mace, Kashmiri mirch powder, ginger powder, turmeric, red chili powder, garam masala powder, black pepper, salt, and coriander powder. Mix well and cook on high flame for 4 minutes.

     

    6. Incorporate Roasted Flour:

       - Add the roasted wheat flour to the chicken and cook for a few minutes to blend.

     

    7. Add the Paste:

       - Stir in the boiled and ground onion-tomato paste. Cook on high flame for another 4 minutes.

     

    8. Simmer the Gravy:

       - Add 1 liter of water, bring to a boil, then reduce the heat and simmer until the chicken is tender.

     

    9. Garnish and Serve:

       - Garnish with bullet green chilies.

       - Serve hot with naan or roti.
