Chicken Darbari
Ingredients
To Make Dry Masala Powder:
1: cumin seeds 1 tbsp
2: coriander 1 tbsp
3: cinnamon stick 2-inch piece
4: black cardamom 3
5: black peppercorn 1/2 tsp
6: nutmeg 1/4 tsp
For Making Curry:
1: oil 1/2 cup
2: onions 3 large (grind)
3: ginger & garlic paste1 tbsp (heaped)
4: chicken 1 kg
5: ginger 1 & 1/2 inch piece (Julian cut)
6: salt 1 & 1/2 tsp
7: red chilli powder 1 tsp
8: asafoetida 1/4 tsp (hing)
9: yogurt 1 cup
10: fresh coriander handful
11: green chilli 8 (or) less
12: fried onions 1 medium (onion fried)
Instructions

1: in a frying pan add cumin seeds, coriander seeds, black peppercorn cinnamon sticks, and black cardamom dry roast till slightly changes colour and an aroma arises, leave to cool and grind.
2: once the spices are ground add nutmeg mix well and keep aside for later.
3: heat oil add onions, ginger & garlic paste fry on high flame till changes colour.
4: add chicken and fry on high flame till changes colour.
5: then add ginger, salt, red chilli, asafoetida and the dry roasted spices mix well and add yoghurt mix again.
6: add water mix and wait for a boil on high flame, then cover and cook on low to medium flame till the chicken is tender and oil comes to the surface.
7: now add fresh coriander, green chilli, and ginger and mix well.
8: Served hot with roti, or naan.
