Chicken Chole Biryani

Ingredients

 For Chicken Tikka:

 1: boneless chicken 1 kg (cut in cubes)

 2: ginger & garlic paste 1 & 1/2 tbsp

 3: garam masala powder 1 tsp

 4: coriander seeds 2 tsp (dry roasted & crushed)

 5: red chilli powder 1 tsp

 6: salt 1 tsp

 7: black pepper powder 1 tsp

 8: lemon juice 2 tbsp

 9: cumin seeds 2 tsp (dry roasted & crushed)

 10: tikka masala powder 3 tbsp

 11: yogurt 6 tbsp

 12: oil 1/3 cup

 13: coal to smoke the curry

 

 For Chickpea (Chole):

 1: oil 1/2 cup

 2: cumin seeds 1 tsp

 3: onion 1 large (finely sliced)

 4: green chilli 3 (chopped)

 5: bay leaves 2

 6: tomatoes 3 large (grind)

 7: ginger & garlic paste 1 & 1/2 tbsp

 8: sweet chilli sauce 4 tbsp

 9: coriander powder 2 tsp

 10: turmeric 1/2 tsp

 11: salt 1 tsp

 12: red chilli powder 1 & 1/2 tsp

 13: chick peas 1 & 1/2 cup raw (boiled) or 2 cans (400g each)

 14: ginger 1 inch (Juliann cut)

 15: coconut milk 1 can (400ml)

 16: fresh coriander leaves 4 tbsp

 17: fresh mint 3 tbsp

 

 For Boiled Rice:

 1: rice 1 kg

 2: salt 2 & 1/2 tbsp 

 3: black cardamom 2

 4: green cardamom 4

 5: cinnamon stick 2 inch piece

 6: star anise 1

 7: black peppercorn 12

 8: cumin seeds 1 tbsp

 

 

 To Assemble:

 1: kewra water 1 tbsp (mixed) with food colour 1/4 tsp

 2: ginger 2 inch (Juliann cut)

 3: green chilli 3 (sliced)

 4: coriander leaves 3 tbsp

 5: mint 3 tbsp

Instructions

  1.  To Cook Chicken Tikka:

     1: in a bowl add chicken with all the ingredients under chicken mix well.

     2: heat oil add the chicken and fry on high flame till changes colour, cover and cook on low to medium flame till the chicken is tender.(can add water 1/2 to 1 cup to cook chicken if you have trouble cooking chicken)

     3: heat the coal.

     4: smoke the chicken as shown in the video and keep the chicken aside.

     To Cook Chickpea (Chole):

     1: heat oil add cumin seeds, onion, green chilli, bay leaves and fry the onions till gets brown on high flame.

     2: then add the tomatoes, ginger & garlic paste, sweet chilli sauce, coriander powder, turmeric, salt, red chilli powder mix and cook on medium flame till the oil separates.

     3: now add chick peas, ginger, coconut milk mix and cover and cook on medium flame till the oil comes on surface.

     4: then add the chicken tikka curry, coriander, mint mix well.

     To Boil Rice:

     1: boil rice 80% with salt, black cardamom, green cardamom, cinnamon stick, star anise, black peppercorn, cumin seeds.

     Last Step:

     1: transfer the curry in a large pot top it with the boiled rice, kewra water and colour mixture, ginger, green chilli, mint, coriander.

     2: cover the lid with a tea towel and cover the pot, keep it on a tawa (flat pan) and on the stove on high flame for 10 minutes and then simmer for 10 to 12 minutes.

     3: then serve hot with chutney of your choice.
