Chicken and Potato Spring Rolls
Ingredients
For Filling:
1: potatoes 1 kg ( peeled, boiled & mashed )
2: boneless chicken 500g ( boiled with 1 tsp ginger & garlic paste, salt 1 tsp and then shredded )
3: carrot 1/2 cup ( grated & squeezed )
4: green chilli 4 ( finely chopped )
5: crushed black pepper 1 tsp
6: crushed red chilli 1 tbsp
7: salt 1 tsp (heaped)
8: cumin seeds 1 tsp ( dry roasted & crushed
9: mayonnaise 3 tbsp ( heaped )
10:tomato ketchup 3 tbsp
11:fresh coriander 3 tbsp
For Making The Rolls:
1: spring roll sheets ( Check mY Homemade Spring Roll Sheet Recipe HERE )
2: egg for sealing the rolls
3: oil for frying

Chicken and Potato Spring Rolls
1: in a bowl add all ingredients under filling mix well and can store this mixture for 3 to 4 days in an air tight container in the fridge.
2: beat the egg.
3: place on spring roll sheet add the mixture as shown in the video and fold and in the end seal it with egg.
4: once the rolls are ready you can freeze them in zip lock bags, air tight container for a month.
5: heat oil.
6: fry in hot oil till gets golden and crisp, place them on paper towel to remove extra oil.
7: serve hot with any sauce of your choice.
