Cheesy Chicken Tikka Sliders
Ingredients
For Marinating the Chicken:
- 1 kg boneless chicken, cut into small pieces
- 4 tbsp oil
- 1 & 1/2 tsp chicken tikka masala
- 1 heaped tsp onion powder
- 1 heaped tbsp ginger & garlic paste
- 4 tbsp lemon juice
- 1 tsp crushed red chili
- 1 tsp garam masala powder
- 1 & 1/2 tsp red chili powder
- 1/2 tsp turmeric
- 1 & 1/2 tsp salt
- 1 & 1/2 tsp coriander powder
- 1 & 1/2 tsp cumin powder
- 1 tsp paprika powder
- 1 tbsp dried fenugreek leaves
- 1/4 tsp orange food color
- 1/2 cup thick yogurt
For the Sauce:
- 1 cup mayonnaise
- 1/2 cup tomato ketchup
- 2 tbsp hot sauce
- 1/2 tsp tikka masala powder
Other Ingredients:
- Coal for smoking the chicken
- 2 medium onions, sliced
- 1 large bell pepper, deseeded and sliced
- 12 medium buns
- 2 cups cheddar cheese, shredded
- 2 cups mozzarella cheese, shredded
- 1 tbsp melted butter
- 3 tbsp chopped coriander leaves
- 1 tsp tikka masala powder
Instructions

1. Preheat your oven:
Set your oven to 350°F (180°C), Gas Mark 4.2. Marinate the Chicken:
In a large bowl, combine all the ingredients listed under “For Marinating the Chicken.” Mix well, ensuring the chicken pieces are evenly coated. Allow the chicken to marinate for at least 30 minutes.3. Prepare the Sauce:
In a separate bowl, mix all the ingredients under “For the Sauce” until well combined. Set aside for later.4. Cook the Chicken:
Heat a frying pan over medium heat. Add the marinated chicken and cook until the chicken changes color. Pour in 1/2 cup water, mix, cover, and cook on medium flame until the water evaporates and the chicken is fully cooked.5. Add Vegetables:
Toss in the sliced onions and bell pepper. Stir everything together and cook on high flame for about 4 minutes. This will soften the vegetables while maintaining a slight crunch.6. Smoke the Chicken:
Heat the coal until it’s red-hot. Place the coal in a small bowl or piece of foil, and set it on top of the chicken mixture in the pan. Drizzle a little oil over the coal, then immediately cover the pan to trap the smoke. Let it sit for a few minutes to infuse the chicken with a smoky flavor, just as shown in the video.7. Assemble the Sliders:
Place the buns on a baking tray. Spread the prepared sauce on the bottom halves of the buns. Add a generous amount of the chicken and vegetable mixture, then sprinkle a mix of cheddar and mozzarella cheese over the top. Spreadthe sauce on the top halves of the buns as well, and place them on top of the chicken and cheese.
8. Bake the Sliders:
Brush the tops of the buns with melted butter, then sprinkle with chopped coriander and a dash of tikka masala powder. Place the tray in the preheated oven and bake until the cheese is fully melted—about 8-10 minutes. Be careful not to over-bake, as the buns can become too hard.9. Serve and Enjoy:
Remove the sliders from the oven and serve them hot. These cheesy chicken tikka sliders pair perfectly with crispy fries and a cold drink. Enjoy!
