Burns Road Kabab Keema
Ingredients
For Marination:
1: chicken mince 1 kg
2: papaya paste 2 tbsp
3: ginger & garlic paste 2 tbsp
4: salt 1 tsp
5: garam masala powder 1 tsp
6: crushed red chilli 1 tsp
7: red chilli powder 1 & 1/2 tsp
8: black pepper powder 1 tsp
9: turmeric 1/4 tsp
10: corainder powder 2 tbsp
11: gram flour 3 tbsp (dry roasted)
12: kabab masala 2 tbsp (readymade)
13: yogurt 1 cup
For Cooking:
1: ghee 1 cup
2: onion 1 large (finely chopped)
3: green chilli 8
4: coals to smoke the mince

1: in a bowl add all ingredients under marination, mix well and keep aside for 2 to 3 hours.
2: heat the ghee add onion and fry till gets golden.
3: add the marinated chicken mince and cook on high flame for 10 minutes, keep stirring.
4: now add a glass of water mix, cover and cook on low to medium flame till the ghee separates.
5: then add green chilli and smoke the mince will the hot coals as shown in the video.
6: serve hot with paratha, roti, naan, mint chutney.
