BANANA SPLIT CUPCAKES

Ingredients

 

 

Cake:

1: 1 1/2 cups all-purpose flour

2: 1/2 tsp baking powder

3: 1/2 tsp baking soda

4: 1/4 tsp salt

5: 3/4 cups mashed very ripe bananas (about 2 large bananas)

6: 1 tsp lemon juice

7: 90g unsalted butter, (softened)

8: 1 cup granulated sugar

9: 1 large egg

10:1 tsp vanilla extract

11:1/2 cup buttermilk 

 

Chocolate Ganache:

1: 2/3 cup milk chocolate chips

2: 1/3 cup heavy whipping cream 

 

Sweetened Whipped Cream:

1: 1 1/3 cups heavy whipping cream

2: 1/3 cup powdered sugar

3: 1/2 tsp vanilla extract

 

Garnishing:

1: 2 bananas sliced

2: 3/4 cup chopped pecans

3: cherries glazed or fresh

 

 

Instructions

  1. BANANA SPLIT CUPCAKES

     

     

    Cupcakes Recipe: Preheat Oven 325f, 160c, gas mark 3.

     

    1: In a bowl sieve & combine flour, baking powder, baking soda and salt, set aside.

    2: In a bowl mash bananas with lemon juice, set aside.

    3: In a large bowl, using an electric mixer, cream together butter and sugar until light and fluffy about 3 - 4 minutes high speed.

    4: beat in egg and vanilla. Then add mashed bananas and stir until combine. Mix in the flour mixture alternating with the buttermilk.

    5: place the muffin papers in the muffin tin, pour the batter in them.

    6: Bake for 22-24 minutes or until toothpick inserted in centre of muffin comes out clean.

    7: Remove from oven and let muffins cool in muffin pan 5 minutes, then remove from muffin pan and let cool 30 minutes on a wire cooling rack.

     

     

    Chocolate Ganache Recipe:

     

    1: For ganache, place chocolate chips in a medium mixing bowl, set aside. 

    2: In a small saucepan, heat cream over medium heat bringing just to a boil. 

    3: Remove from heat and pour over chocolate chips, whisk until smooth. 

    4: Allow ganache to cool slightly before pouring over cupcakes.

     

     

    Sweetened Whipped Cream Recipe:

     

    1:  in a large mixing bowl with and electric mixer, whip whipping cream until soft peaks form. Stir in powdered sugar and vanilla and whip until stiff peaks form (keep whipped cream refrigerated until serving).

     

     

     

    Assemble Cupcakes:

     

    1: Pour about 1/2 tablespoon full over over each cupcake. Allow to cool.

    2: pipe the whipped cream, sprinkle the nuts, add 1 piece of banana, 1 cherry.

    3: serve and enjoy.
