Ingredients

For Soaking Chicken:

 1: whole chicken with or without skin 1kg (remove the backbone)

 2: salt 1tbs

 3: baking powder 5 tsp

 4: water enough to cover the chicken

 

For Marination:

 1: oil 1/4 cup

 2: ginger paste 1tbs

 3: crushed black pepper 1 tsp

 4: coriander powder 2 tbs

 5: red chilli powder 1 tsp

 6: star anise powder 1 tsp (grind to a powder)

 7: paprika powder 2 tsp

 8: black cardamom powder 1 tsp (dry roast the seeds and grind)

 9: salt 1 tsp

 10: lemon juice 1/4 cup

 11: turmeric 1/2 tsp

 12: dry ginger powder 1/2 tsp

 13: dry rosemary 1 tsp

 

For Garnishing:

 1: crushed red chilli 1/2 tsp (dry roasted)

 2: garlic 3 pieces (finely chopped &roasted in 1 tsp oil till golden)

 3: chicken powder 1/2 tsp

Instructions

  1. BAKED CHICKEN

    Preheat Oven 180c, 350f, Gas Mark 4.

    1: in a large pot add water, salt, and baking powder mix well add the chicken, leave it for a good 15 to 20 minutes, then drain the water.

    2: in a blender add all the spices under marination, oil, and lemon juice blend well(can add a little water or lemon juice if trouble while grinding)

    3: now add the grinned masala to the chicken inside out, and sprinkle rosemary.

    4: place it on a baking tray.

    5: bake the chicken on each side for 25 minutes or till baked completely & has a golden color.

    6: mix crushed red chili, garlic, and chicken powder, and sprinkle on the baked chicken.

    7: Served hot with fries, salad, and sauce of your choice.
