Badam Barffi

Ingredients

- 2 cups almonds (soaked in water, boiled, and peeled)

- 1 can (397g) sweetened condensed milk

- 1 cup fresh milk

- 1 cup ghee (clarified butter)

- 2 tbsp granulated sugar

- 1/2 tsp green cardamom powder (elaichi)

- 10 pistachios (sliced)

- 15 almonds (sliced)

- Baking tray (for setting)

 

Instructions

  1. 1. Prepare the Almond Paste:

       - Start by peeling the boiled almonds.

       - Grind the peeled almonds with fresh milk to form a thick, smooth paste.

     

    2. Cook the Almond Paste:

       - In a non-stick pan, add the almond paste.

       - Cook on medium heat for about 2 minutes to remove the raw taste of the almonds, stirring continuously.

     

    3. Mix and Cook the Ingredients:

       - Add the sweetened condensed milk, granulated sugar, and green cardamom powder to the almond paste.

       - Mix well and continue to cook on low to medium heat.

       - Cook until the mixture starts to stick together, leaves the sides of the pan, and gathers in the center, stirring continuously.

     

    4. Incorporate the Ghee:

       - Gradually add ghee to the mixture, a little at a time, stirring continuously.

       - Ensure all the ghee is absorbed, and the mixture becomes smooth and soft.

     

    5. Set the Barfi:

       - Grease a baking tray with ghee.

       - Spread the cooked mixture evenly in the tray.

       - Sprinkle the sliced pistachios and almonds evenly over the top.

     

    6. Cool and Serve:

       - Allow the mixture to cool completely.

       - Once cooled, cut into desired pieces and serve your delicious Badam Barfi.

     

    Tips for Perfect Badam Barfi:

    - Soaking and Peeling: Ensure the almonds are properly soaked and peeled to achieve a smooth paste.

    - Continuous Stirring: Stir continuously to prevent the mixture from sticking to the pan and to achieve a smooth texture.

    - Setting Time: Allow the barfi to cool completely before cutting to get clean, sharp pieces.
