  1. ANDA PARATHA

    TO MAKE DOUGH:

     
    1: In a mixing bowl, add whole wheat flour, salt, ajwain or carom seeds, cumin seeds, turmeric powder, red chilly powder and chopped coriander leaves.
     
    2: Mix well.
     
    3: Add a small amount of water and knead it to smooth non-sticky dough.
     
    4: Wrap it with plastic paper keep aside for 20 mins & roll it to balls.
     
     
    TO PREPARE STUFFING:
     
     
      1: Heat oil in a nonstick pan.
     
      2: Add cumin seeds, and chopped onion, and sauté till it becomes translucent.
     
      3: Add ginger garlic paste and sauté till the raw smell disappears.
     
      4: Add finely sliced green chili and sauté further.
     
      5: Add turmeric powder, red chilly powder, coriander powder and fry for 2 minutes.
     
      6: Break an egg and add directly to the pan.
     
      7: Mix it quickly and scramble well.
     
      8: Add salt and chopped coriander leaves and sauté further.
     
      9: Add garam masala pwd and lime juice.
     
    10: Mix well.
     
    11: Turn off flame.
     
    12: Stuffing for egg paratha is ready.
     
     
    TO MAKE PARATHA:  
     
      1:  Take the dough from the wrap, add 2 tsp of oil, and knead well for two more minutes.
     
      2  Divide it into equal-sized balls.
     
      3:  Take one ball, flatten it dip it in flour, and roll it into a round disc.
     
      4:  Apply a little oil and flour on it.
     
      5:  Add 2 tbsp of egg stuffing inside.
     
      6:  Close the edges and make it to ball shape.
     
      7:  Sprinkle some flour and roll out again carefully into a roti shape.
     
      8:  Heat a skillet/tawa.
     
      9:  Add the paratha and cook it from one side.
     
    10:  Drizzle oil to the sides and flip over both sides, till golden brown spots appear on both sides.
     
    11:  Yummy egg paratha is ready.
     
    12:  Repeat the same to make more Parathas.
