Aloo Paratha Recipe Dhaba Style
Ingredients

To Make Filling:
1: potatoes 1 kg (peeled, boiled & mashed)
2: onions 3 medium (finely chopped)
3: ginger & garlic paste 2 tbsp
4: green chilli 4 (finely chopped)
5: cumin seeds 1 tbsp (crushed)
6: coriander seeds 1 tbsp (crushed)
7: turmeric powder 1/2 tsp
8: salt 1 & 1/2 tsp (heaped)
9: dry fenugreek leaves 1 tbsp
10: crushed red chilli 2 tbsp
Other Ingredients:
1: oil 4 tbsp
2: fresh coriander leaves hand full
3: ghee as much as required for frying parathas.

Instructions

1: heat oil add onions and fry till the onions get soft.
2: then add ginger & garlic paste and fry for a further 3 minutes.
3: now add crushed red chili, salt, turmeric, coriander, and cumin mix, and then green chili, and dry fenugreek leaves mix well.
4: add the fried onion mixture to the potatoes, and coriander leaves and mix well.
5: make two small dough balls, roll them both the same size add the filling, cover with the other rolled dough, and seal as shown in the video.
6: roll the parathas round.
7: heat the tawa, place the paratha, and cook one side then spread ghee on both sides and fry till gets golden and crisp.
8: take a small dough ball, roll it, and spread the filling, cut it in the middle as shown in the video, and roll it to make a cone shape.
9: roll the paratha cook on both sides and then spread ghee on both sides to fry till gets golden and crisp.
10: Served hot with achar or raita.
