1: mustard oil 1/3 cup (heat it to a point when smoke rises, then leave to cool and use as required)

2: cumin seeds 1 & 1/2 tsp

3: onion 1 medium (chopped)

4: asafoetida ( Hing ) 1/4 tsp (heaped)

5: dry red chilli 2

6: ginger 1 & 1/2 inch (finely chopped)

7: garlic 1 & 1/2 tbsp (finely chopped)

8: green chilli 3 (chopped)

9: tomatoes 2 large (sliced)

10: coriander powder 1 tsp (heaped)

11: salt 1 tsp

12: turmeric 1/2 tsp

13: red chilli powder 1 & 1/2 tsp

14: water 1/2 cup

15: potatoes 500g (peeled, cut into cubes)

16: water 1 cup 

17: spinach 795g (1 can)

18: dry fenugreek leaves 1 tbsp (heaped)

19: garam masala powder 1 tsp

20: clarified butter ( desi ghee )  2 tbsp

  1. ALOO PALAK

    1: heat oil add onions, garlic and fry till light golden, on high flame.

    2: then add tomatoes, crushed red chili, salt, and turmeric and cook till the tomatoes get soft and the oil comes on the surface, on high flame.

    3: now add the potatoes mix well then add the spinach, water 1 glass cover and cook on medium flame till the potatoes are softened and the water dries.

    4: add garam masala powder mix well.

    5: in a pan heat 4 tbsp of ghee or oil, add cumin seeds, ginger, and green chili fry for a minute or so, and add it to the curry,  mix well.

    6: Served hot with roti, or naan.
