Aloo Methi Palak

Ingredients

 1: oil 3/4 cup

 2: cumin seeds 1 & 1/2 tsp

 3: onion 1 large (finely sliced)

 4: ginger & garlic paste 1 & 1/2 tbsp

 5: green chilli 5 (chopped)

 6: tomatoes 3 large (sliced)

 7: salt 1 & 1/2 tsp

 8: red chilli powder 2 tsp

 9: turmeric 1 tsp

10: water 1/2 cup

11: spinach 1 kg (cut & wash)

12: fenugreek leaves 1 kg (cut & wash)

13: corainder leaves 2 large bunches (cut & wash)

14: potatoes 1/2 kg (peeled & cut in cubes)

15: water 1 glass

16: milk 1 glass

17: green chilli 6

18: garam masala powder 1 tsp

Instructions

  1.  1: heat oil add cumin seeds, onion and fry till get golden, on high flame.

     2: now add ginger & garlic paste mix and fry for 3 to 4 minutes.

     3: then add green chilli, tomatoes, salt, red chilli powder, turmeric mix well add water and cook till the tomatoes reduce and oil separates, on high flame.

     4: now add spinach, fenugreek leaves, coriander leaves mix and cook till the water from the vegetable dries completely on high flame.

     5: add potatoes mix and cook for 4 minutes on high flame, add water, milk mix and lock the pressure cooker, when the weight moves time for cooking will be 5 minutes and then close the flame release the steam and then open the pressure cooker and cook further till the oil separates (and if cooking in a normal pot after adding milk and water cook on medium flame till the potatoes are tender and oil separates).

     6: once cooked add green chilli, garam masala powder mix.

     7: garnish it with little butter and serve hot with roti, paratha, sweet lassi.
