Aloo Gobhi Shimla Ki Sabzi

Ingredients

 1: oil 1 cup (heaped)

 2: potatoes 800g (pealed & cut in cubes)

 3: cauliflower 800g (cut in pieces)(gobhi)

 4: bell peppers 400g (deseeded & cut in cubes)

 5: cumin seeds 1 & 1/2 tsp

 6: asafoetida 1/2 tsp (hing)

 7: green chilli 4 (finely chopped)

 8: fresh ginger 1 & 1/2 tbsp (crushed)

 9: onion 1 large (finely chopped)

10: tomatoes 2 large (chopped)

11: red chilli powder 1 & 1/2 tsp

12: salt 1 & 1/2 tsp

13: turmeric 1 tsp

14: garam masala powder 1 tsp

15: green chilli 4 (cut in half)

16: dry fenugreek leaves 1 tbsp (heaped)

Instructions

  1. 1: heat oil add the potatoes and fry on high flame till gets crisp on the top, then remove and keep aside.

     2: now add the cauliflower and fry on high flame as well till it gets dark brown colour on the flowers, gets soft and then remove and keep aside.

     3: add the bell peppers and fry on high flame for 1 to 2 minutes and remove it.

     4: now in the same oil add cumin seeds, asafoetida, green chilli, ginger, onion and fry on high flame till the onions get soft.

     5: then add tomatoes, red chilli, salt, turmeric, water 1 cup mix and cook on medium flame till the oil separates and the tomatoes are reduced.

     6: add the fried vegetables mix and simmer on low flame for 8 to 10 minutes till the oil comes on the surface.

     7: then add garam masala powder, green chilli, dry fenugreek leaves & mix well.

     8: serve hot with boiled rice, roti, paratha.
